Baked Broccoli (GF) (LC) (V)

Ingredients

  • 3 heads of broccoli
  • 2 eggs
  • 1/2 cup gluten free breadcrumbs (doesn't have to be GF if you're not gluten intolerant)
  • 5 cloves of garlic
  • 3/4 cups of shredded cheese

Method

  1. Preheat oven to 200C (390F)
  2. Chop broccoli into small pieces and place on a lined baking tray
  3. Slice/mince 5 cloves of garlic and add to broccoli
  4. Crack two eggs and stir them together in a mixing bowl to break up the yolk, spread this over the top of the broccoli and garlic
  5. Sprinkle breadcrumbs and cheese on top
  6. Bake for 10-15 mins
