Banana Breakfast Muffins (V+) (GF)

Ingredients

  • 3 very ripe bananas
  • 10 dates
  • 1 tsp rice malt syrup
  • 2tsp cinnamon
  • 1 egg
  • 1 tsp chia seeds
  • 1 cup almond meal
  • 1/2 cup saltanas

Method

  1. Preheat oven to 210C (410F)
  2. Use fork to mash 3 ripe bananas in a bowl
  3. Cut dates into very small pieces and add into bowl with banana
  4. Add in all remaining ingredients and stir to combine
  5. Pour into muffin liners
  6. Cook for approx 20-25 mins or until tops are golden brown
