Ingredients

  • 2 whole eggs
  • 2 egg whites
  • 1 cup sliced mushrooms
  • 1 tomato
  • 1/2 tsp paprika
  • 1 pinch Himalayan salt
  • 1/2 tsp olive oil
  • 1 handful dairy free cheese
  • (optional) whole wheat toast
  • (optional) half an avocado
  • (optional) spring onions

Method

  1. Heat up olive oil in a skillet, add eggs, mushroom and tomato
  2. Mix all ingredients and add spices
  3. Cook for 10 mins
  4. (Optional) Serve with whole wheat toast and avocado
