Carrot Dip (V+) (GF)

  • 500g carrot (1lb)
  • 1/3 cup olive oil
  • 4-6 tsp chilli paste
  • 2 garlic cloves
  • 300g (10oz) chickpeas
  • 1 pinch Himalayan salt


  1. Wash, peel and chop ends off carrots
  2. Cut the carrots into 2-3 pieces
  3. Place water in a large pot with carrots and salt
  4. Boil water and then turn temperature down to simmer until carrots are cooked all the way through
  5. After carrots are cooked remove them and allow them to cool slightly
  6. Place carrots and all other ingredients into a food processor
  7. Pulse until all ingredients are combined
  8. Serve chilled
