Express Blender Muffins (V) (GF) (DF)

  • 4 ripe bananas
  • 4 eggs
  • 3 tbsp rice malt syrup
  • 1/2 cup yoghurt (greek or coconut)
  • 0.5 tsp baking soda
  • 1 tbsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 cup cacao nibs
  • 2.5 cups shredded oats


  1. Preheat oven to 230C (440F)
  2. Line a muffin tray with muffin papers
  3. Combine all ingredients (except oats) in a blender until they've reached a smooth consistency
  4. Slowly add in oats until the mix becomes thicker. It should still be easy to pour
  5. Pour ingredients into muffin tray
  6. Cook for 15-20 minutes, a test skewer should come out clean when inserted/removed to check if cooked all the way through
