Breakfast Toastie (V) (DF) (DF)

  • 2 x wrap breads (gluten free, or spinach, or whole wheat)
  • 1 cup baby spinach leaves
  • 3 eggs
  • 200g cannellini beans
  • 2 tomatoes (diced)
  • 1/4 cup dairy free cheese (or shredded cheese of preference)
  • Olive oil (for pan)


  1. Heat pan and add olive oil
  2. Add eggs, beans, tomato, and cheese and allow them to cook for 5 minutes. Stir occasionally.
  3. Add in 1 cup of spinach and allow it to wilt
  4. Keep cooking on low/medium heat until eggs are cooked
  5. Serve on two wrap breads
  6. Fold wraps like an envelope so there are no open edges
  7. Heat up a sandwich toaster
  8. Heat wraps in the toaster
