Muesli Crumble (V) (GF) (DF)

  • 3 cups of muesli (gluten free if you need)
  • 1/4 cup crushed cashews
  • 2 tsp psyllium husk
  • 1 tsp cinnamon
  • 2 tbsp melted peanut butter
  • 3 tbsp organic Manuka honey
  • (optional) 80%+ dark chocolate for serving afterwards


  1. Preheat oven to 220C/420F
  2. Line a baking tray with baking paper
  3. Combine all dry ingredients in a mixing bowl
  4. Melt peanut butter and add peanut butter and Manuka honey to dry ingredients
  5. Place ingredients in a lined baking tray and compress together to sit at one end of the tray 
  6. Set oven timer for 15 mins
  7. Remove and allow to cool before cutting or serving (if it's still hot it will fall apart)
  8. Melt dark chocolate to drizzle over the top
  9. Store in the fridge
