Instructions

  1. Whisk the lemon juice, coconut aminos, grated garlic, and half the olive oil together in a bowl. Cut the chicken into chunks, add the chicken, toss to coat, cover with plastic, and marinate in the refrigerator for 1 hour.
  2. For the cauliflower rice, grate the florets in the food processor in batches using the grater adapter to achieve rice-like grains. You can also use a box grater.
  3. Heat the oil in a large skillet over medium. Sauté the mushrooms for 5-7 minutes or until they begin to brown, then add the garlic and continue to sauté until fragrant.
  4. Add the riced cauliflower and sauté for 5-7 minutes or until tender. Add the coconut aminos, salt, and black pepper, then cover the skillet during the last 3 minutes of cook time.
  5. Uncover the cauliflower rice, remove it from the heat, and set it aside.
  6. Prepare a grill or grill pan for medium-high heat cooking and thread the chicken onto skewers. Oil the grates with the remaining olive oil and grill the chicken for 7 minutes per side.
  7. Divide the chicken skewers and rice between the meal prep containers and refrigerate.

Notes:

Meals can be refrigerated for up to 4 days.

 

To reheat, cover the container with foil and pop into a 130-degree oven until warmed through. Remove the chicken from the skewers if reheating in the microwave.
