A super simple chicken skillet which you can either have as is or serve with extra sides, such as rice, gauc, or plain Greek yoghurt as a sub for sour cream.
2 tsp olive oil (or your preferred cooking oil)
½ onion (chopped)
1 red capsicum
1 green capsicum
1 green chilli
500g chicken breast
200g black beans
Low fat mozzarella (20g each)
Chop all vegetables and place aside (except onion, we need to use this first)
Cut up onion and place in a skillet with olive oil or your preferred cooking oil
Cut up chicken and place into a bowl with your desired amount of cumin, black pepper, salt, cayenne pepper, and garlic powder, mix well and add into skillet when onion is fragrant.
Cook chicken and onion on a medium heat for 5-7 mins before adding in all other vegetables.
Add your chopped capsicums, black beans, chilli, and any extra seasonings (I used extra cayenne pepper and cumin at this step), stir well and allow to cook (stirring every now and again) for 15mins.
Serve into 3 bowls and add coriander and low fat mozzarella.
