All you need for these protein-packed bars are peanut butter, dates for sweetness, nourishing seeds, your favourite protein powder, and dark chocolate. They come together fast and require no baking. For the best result, use natural peanut butter or make your own. Just add 365 grams of shelled peanuts and a pinch of salt to a blender or food processor (a blender works best) and blend/process until you have creamy peanut butter. Premium dark chocolate is also essential. It melts beautifully and creates a thin, crisp chocolate layer with a glossy finish. Go with 70-72% or 90% if you appreciate the deep intensity of quality dark chocolate.

  1. Line a standard loaf pan with parchment paper. Set it aside.
  2. Pulse the peanut butter and dates in a food processor until just combined, then add the hemp seeds, sunflower seeds, and protein powder.
  3. Process until the ingredients take on a cookie-dough-like texture. Add more seeds and/or protein powder if the mixture is too wet. If it is a bit dry, add more peanut butter.
  4. Transfer the mixture to the lined loaf pan and press it into the pan in an even layer.
  5. Freeze for 10 minutes.
  6. Meanwhile, melt the chocolate in the microwave or use a double boiler.
  7. Pour the chocolate over the contents of the loaf pan in an even layer.
  8. Return the pan to the freezer for another 5-10 minutes. The longer the bars freeze, the firmer they will get.
  9. Lift out the pan using the parchment paper, cut into 12 equal-sized bars, and enjoy. Leftovers can be individually wrapped and refrigerated.

Notes

The chocolate layer is optional but highly recommended.
