Recipe: Turkey & Sweet Potato Hash

A super easy one pan bake for your breakfast! Just grab a pan and bake away, no other baking/cooking equipment necessary.


Ingredients

  • 200g (7oz) lean turkey mince (+ cooking spray)

  • 2 small sweet potatoes

  • Roast vegetable seasoning or a combo of salt, pepper, and rosemary (example)

  • 2 tbsp salt and sugar reduced BBQ sauce (example) - included in macros

  • 4 whole eggs

 

Method

  1. Preheat oven to 180C (350F)

  2. Line a baking tray with baking paper

  3. Wash and chop sweet potatoes (leaving skin on)

  4. Place sweet potatoes on baking tray with roast vegetable seasoning

  5. Cook sweet potatoes in the oven for 15 mins, remove and flip potatoes over

  6. Clear room on the tray between the potatoes for 4 eggs

  7. Crack and pour eggs into gaps between potatoes

  8. Put the tray back into the oven for a further 10 minutes

  9. Heat up a pan, add a small amount of cooking spray and cook turkey mince for 10 mins (breaking into small pieces)

  10. Add turkey mince to plate and serve with potato hash, eggs and BBQ sauce on top

Recipe: Lime & Coriander Barramundi

Ingredients

  • 1 barramundi fillet
  • 1/4 avocado
  • Spring onion
  • Coriander
  • 3/4 cup butternut pumpkin (I chose pre-diced)
  • 1 handful of almonds
  • 3 kale leaves
  • 1/2 cup green beans
  • Olive oil
  • Himalayan salt
  • Cayenne pepper
  • Cinnamon
  • 1 lime

 

You can cook the vegetables in the oven if you prefer, however I used the microwave to save time.

Method

  1. Preheat oven to 180C (350F) and line a baking tray with baking paper
  2. Place barramundi fillet on the baking paper, squeeze lime juice over the top
  3. Chop up some spring onion and coriander, place on top of the barramundi
  4. Drizzle a dash of olive oil over the barramundi, place in the oven for 15 mins
  5. While the barramundi is cooking prepare the vegetables
  6. Top and tail green beans and place in the microwave for 4 mins
  7. In a glass container place pumpkin pieces, cinnamon, and cayenne pepper - microwave these for 6 mins
  8. Chop up kale and place in another (yes, another) glass container. Drizzle olive oil and add some Himalayan salt over the kale and massage the leaves. Microwave this for 3 mins
  9. When the barramundi is ready remove it from the oven and serve with cooked vegetables
  10. Serve with almonds on top

Recipe: Gut Repair Soup

Instead of just having bone broth plain, sometimes I love to turn it into a soup. Throw in a few extra ingredients for added micronutrients, and you've got yourself a great little soup to help with stomach issues. This is perfect as a little add in on a ketogenic diet too, because keto will be making your body burn through more electrolytes, help replenish them with this soup!

Ingredients

  • 1L bone broth
  • Himalayan salt
  • Pepper
  • 2 tbsp apple cider vinegar
  • 500g (1lb) shredded chicken
  • Bok choy
  • Spring onion
  • 3 cups water
  • 1/2 onion
  • 3 tbsp olive oil
  • 3-4 cloves garlic

Method

  1. Place a pot on low heat, add oil, chopped onion and garlic until fragrant.
  2. Add in water, apple cider vinegar and bone broth
  3. Add shredded chicken, and finely chopped bok choy, spring onion, and other fibrous veg that you like
  4. Season with Himalayan salt and pepper
  5. Allow to simmer on a lower temperature for 1 hour before serving

Recipe: Power-Packed Green Curry

Makes 3 servings
(per serve) Carbs 11.5g / Fat 38.2g / Protein 22g / Calories 465


Ingredients

  • 2 tbsp peanut oil
  • 3 tbsp green curry paste
  • 500g (1lb) chicken tenderloins
  • 1 tbsp fish sauce
  • 1.5 cups chicken stock
  • 1 can coconut milk
  • 1 stalk of lemongrass
  • 1" ginger
  • 1 cucumber
  • 1 green chilli
  • 2 florets of broccolini
  • Juice of 1/2 a lime

Method

  1. Put a pot on your stovetop on a low heat and add peanut oil until hot
  2. Add the green curry paste to the peanut oil and allow to cook for approximately 2 minutes on its own before adding the chicken
  3. Cut the chicken tenderloins up into small pieces and add to the pot
  4. Cook the chicken for 5 minutes, making sure to turn the chicken over so it doesn't burn on any side
  5. Add fish sauce, chicken stock, coconut milk, lemongrass, grated ginger, chilli, and cucumber
  6. Allow the pot to simmer for around 15-20 minutes on a low heat
  7. Add in broccolini and lime juice and cook for a further 5 minutes
  8. Remove the lemongrass stalk and serve! :)

Recipe: Prawn Salad

Ingredients

  • 12 prawns (peeled)
  • Avocado oil
  • Smoked salt flakes
  • Chilli flakes
  • Radishes
  • Baby watercress
  • Baby spinach
  • 1/2 a lemon
  • 1/2 an avocado

Method

  1. Place a pan on medium heat with prawns, avocado oil, smoked salt flakes and chilli flakes (it's best to prepare these ingredients together in a bowl beforehand and then add them to the pan). Cook for around 3-5mins per side
  2. Separately, prepare your salad ingredients
  3. Combine all ingredients into a bowl
  4. Dress the salad with lemon juice and avocado oil

Recipe: Lower Carb Spaghetti & Meatballs

Makes 2 servings

Ingredients (Main)

- 3 zucchinis
- 10-12 grass fed beef meatballs (or use mince to make your own)
- 6 cloves of garlic
- 6 medium size cup mushrooms
- 1tbsp avocado oil
- Rosemary

Ingredients (Pasta Sauce, if making it yourself)

- 2tsp olive oil
- Parsley
- Salt & pepper
- 2 tins of tomato puree
- 2 brown onions, chopped
 

Method (Pasta Sauce)

  1. Place a saucepan over high heat
  2. Add the olive oil, garlic and onion and cook until fragrant (~3 mins)
  3. Add the tomato puree, parsley and salt and pepper and simmer for 10-15 mins

Method (Everything else)

  1. Place a skillet over medium heat and add garlic, avocado oil and meatballs, cook for around 5 mins
  2. Boil a kettle
  3. Take your zucchinis and cut off both ends, then using a vegetable spiraliser or a mandolin slicer, slice it up (longways) to create 'spaghetti'
  4. Place the zucchini spaghetti into a large bowl and pour boiling water over the top, let these sit for 10-15 mins, strain, and then pat them off slightly with a paper towel (so they aren't soggy)
  5. While the zucchini is sitting in the boiling water head back over to your skillet and add in the mushrooms, rosemary (tear off just the individual leaves) and pasta sauce
  6. Place a lid over your skillet and turn it down to a lower heat
  7. After you have plated up your zucchini spaghetti remove the lid on your skillet, mix it around a little and serve

Recipe: Chicken & Greens Soup

Makes 2 servings

Ingredients

  • 300-400 grams cooked chicken
  • 4 cups vegetable stock
  • 3 heads of broccoli
  • 4 stalks of celery (chopped)
  • Ginger (grated up, as much as you like)
  • 1-2 tsp turmeric
  • 1 tsp apple cider vinegar
  • 2 tbsp split peas

Method

  1. Place a large pot on your stove on a very low heat
  2. Add in all the ingredients
  3. Allow to cook with the lid on for around 1 hour
  4. If you wish, place the ingredients in a blender afterwards for a smoother consistency

Recipe: Gluten Free Mushroom Gnocchi

Makes 2 servings
(per 1) Carbs 146.4g / Fat 13.8g / Protein 20.4g / Calories 778.5 (per serve)


Ingredients

  • 1-2 tsp avocado oil
  • 500g (17oz) gluten free gnocchi (this meal can be vegan if you opt for a brand which makes gnocchi without the egg)
  • 3 cups of chopped mushrooms
  • 1 can washed cannellini beans
  • 1/3 cup coconut milk
  • Baby spinach

Method

  1. Place 1-2 tsp of avocado oil into a skillet on a low heat

  2. Add gnocchi to skillet, ensuring there are gaps between the individual pieces

  3. Allow the gnocchi to cook for 3-5 minutes on each side to allow them to become slightly crispy on the outside but cooked through the centre.

  4. Add in 3 cups of chopped mushrooms and 1 can of washed cannellini beans, allow this to cook for another 5 minutes.

  5. Add in 1/3 cup of coconut milk and a handful of dairy free cheese (if you don't need to be dairy-free with your diet choose parmesan for a better flavour match), allow this all to melt in for another 10 minutes.

  6. Lastly add in some baby spinach (however much you desire) and stir this through, the spinach will wilt very quickly, so don't let it cook for more than another 5 minutes.

  7. Serve and add baby spinach on top

Recipe: Spiced Quinoa & Lime

Makes 2 servings

Ingredients

  • 1-2 tsp avocado oil
  • 1 brown onion
  • 2-3 cloves of garlic
  • 1 chilli (chopped)
  • 1 green capsicum
  • 1/2 cup washed quinoa
  • 1 cup vegetable stock (or water)
  • himalayan salt
  • 1/3 cup cumin + chilli powder
  • 3/4 cup frozen corn
  • 1 can washed black beans
  • 8-10 cherry tomatoes
  • 1 avocado
  • 1 lime

Method

  1. Add avocado oil to a skillet on medium heat
  2. Chop up 1 brown onion, 2-3 cloves of garlic and 1 chilli
  3. Heat these in the pan until fragrant (~1 min)
  4. Slice up 1 green capsicum and place in the skillet
  5. Add in 1/2 cup of washed quinoa, 1 cup of vegetable stock, a small amount of himalayan salt, and (depending on how much spice you want the meal to have) around 1/3 cup mix of chilli powder and cumin.
  6. Add in 3/4 cup of frozen corn, 1 can of washed black beans and 8-10 cherry tomatoes.
  7. Stir the ingredients through and place a lid over the top to allow the dish to simmer for around 15 minutes
  8. Remove from the heat and serve with 1/2 an avocado and the juice of half a lime

Recipe: Banana Protein Bars

Beau and I are always throwing around ideas. Always. And most of the time when I have a food idea he is quick to add, "are you adding protein into it!?!" And sometimes I have to cave, like I've done with this recipe. These are a really handy little snack for before training. The banana and the carbohydrates in the oats will give you energy and the protein in them will help with your recovery! I decided to use a chia and flaxseed sprinkle in this, the one I have contains chia seeds, pumpkin seeds, flaxseed, sultanas and a bunch of other things!

Makes 12 bars

Ingredients

  • 6 ripe bananas 
  • 3 tsp vanilla bean paste
  • 3/4 cup GAT Supertein vanilla protein
  • 1/2 cup chia + flaxseed sprinkle
  • 2 tsp cinnamon
  • 2.5 cups oats

Method

  1. Preheat oven to 200C
  2. Line a deep baking tray with baking paper
  3. Place peeled bananas in a large bowl and mash them using a fork until they are a runny consistency and there are no large lumps
  4. Stir in the rest of the ingredients into the banana until they are mixed evenly
  5. Pour the mix into the baking tray and then place it into the oven
  6. Let the bars cook for 30 minutes or until they are slightly crunchy on the top and the edges
  7. Remove from the oven and let them cool before serving
