- Preheat the grill to medium
- Spray oil on a small ovenproof frypan over medium heat. Add capsicum, and onion and cook for 2 minutes or until slightly softened.
- Add tomato, spinach, olives, salt, and paprika and cook until spinach as softened.
- In a separate bowl or glass whisk up whole eggs and egg white and pour into pan, then crumble feta on top. Stir through for a minute and then place pan under the grill and cook for 3-4 minutes until set.
- Cool slightly in pan, remove frittata and sprinkle with parsley to serve
