- Preheat oven to 177 degrees Celsius. Lightly grease, then line a loaf pan with parchment paper. Trim off any excess parchment paper and discard.
- Whisk the almond flour, sweetener, flax meal, baking powder, spices, and salt together in a bowl.
- Mash the banana in a separate bowl. Add the eggs, the additional egg yolks, coconut oil, and vanilla extract—stir to combine.
- Stir the dry ingredients into the wet ingredients until well combined. Fold in the zucchini.
- Pour the batter into the prepared pan.
- Bake for 30 minutes or until a tester comes out clean when inserted in the center.
- Cool for 30-45 minutes. Lift the bread out of the pan using the parchment paper and transfer to a cooling rack after about 15 minutes.
- Slice and serve.
