Recipe: One Pot Chicken & Mushroom Pasta

An easy to prepare dinner which is high in protein and will have you feeling full! Either drain the broth at the end of keep it in, up to you :D


  • 450g (16oz) chicken breast

  • 180g (6oz) pasta

  • fresh basil

  • 500mL (17fl oz) chicken broth

  • 200g (7oz) mushrooms

  • 1/3 brown onion

  • 200g (7oz) green beans

  • 200mL (8fl oz) light coconut milk

  • 1  or 2 cups of water

  • 3-4 cloves garlic

  • (optional – serve with) low fat cheese


  1. Chop chicken and all veg

  2. Add onion into a pot on a low heat and allow it to become fragrant

  3. Add all ingredients (except pasta) into the pot and allow to cook for 15 mins (chicken should be almost cooked through by this point)

  4. Add pasta to the pot and cook for a further 15 mins or until you prefer and serve

  5. You can keep in some of the broth or drain it out completely
