3 egg whites
1 whole egg
2 large handfuls of baby spinach leaves
Lightly spray skillet with cooking spray. Cook onions until fragrant.
In a glass place egg and egg whites with pepper, mix well before adding to the pan with the onion.
Add in tomato and spinach, and optionally, add some other seasoning, such as BBQ
Serve when ready!
