Recipe: Meal Prep Taco Breakfast

A meal prep breakfast which packs a flavour punch! Keep the toppings stored separately :)


  • 150g (5oz) turkey mince

  • 1 egg

  • ¼ red capsicum

  • ¼ yellow capsicum

  • Brown onion

  • Olive oil spray

  • Taco seasoning or mix your own

  • (topping) 1 tbsp Salsa

  • (topping) 15g (0.5oz) low fat cheese

  • (topping) ¼ avocado


  1. Heat oil in a medium skillet

  2. Add in onion and capsicum and cook until capsicum starts to soften

  3. Add ground turkey and taco spice and cook through well

  4. Create space in the turkey and crack egg in – mix well

  5. When everything is cooked add salsa, low fat mozzarella and avocado for toppings.
