High Protein, Sugar-Free Dark Chocolate Chunk Muffins

- Preheat the oven to 180 degrees Celsius and line a muffin tin with paper liners.
- Add the oat flour, protein powder, and baking powder to a mixing bowl. Whisk to combine.
- Mix the nut butter, banana, and vanilla extract in a separate bowl.
- Add the wet ingredients to the dry ingredients. Mix until the batter is well combined.
- Fold in half of the chocolate chunks.
- Evenly divide the batter between the eight muffin tin cups, then top with the remaining chocolate chunks.
- Bake for 10 minutes or until a tester comes out with moist crumbs when inserted in the centre.
- Remove from the oven, cool for 10 minutes, and then transfer the muffins to a cooling rack.
- Enjoy.
