Ingredients

Instructions

  1. Preheat the oven to 180 degrees Celsius and line a muffin tin with paper liners.
  2. Add the oat flour, protein powder, and baking powder to a mixing bowl. Whisk to combine.
  3. Mix the nut butter, banana, and vanilla extract in a separate bowl.
  4. Add the wet ingredients to the dry ingredients. Mix until the batter is well combined.
  5. Fold in half of the chocolate chunks.
  6. Evenly divide the batter between the eight muffin tin cups, then top with the remaining chocolate chunks.
  7. Bake for 10 minutes or until a tester comes out with moist crumbs when inserted in the centre.
  8. Remove from the oven, cool for 10 minutes, and then transfer the muffins to a cooling rack.
  9. Enjoy.
