Recipe: Zucchini Chicken Fritters
This dish is half protein, half vegetable, and fully delicious. It’s my chicken zucchini fritters.
You can prep up a whole stack and pair them with hot or cold veggies, and a carb of your choice.
Zucchini Chicken Fritters

- Start by grating the zucchini onto some paper towel or a clean cloth.
- Use the paper towel or cloth to squeeze excess moisture out of the zucchini. A lot will come out! But it’s important not to skip this step, otherwise your fritters are going to fall apart.
- Transfer the zucchini to a bowl and add in the chicken, salt, egg, garlic, green onion, pepper, parsley, ricotta, and lemon juice.
- Heat a large non-stick pan to medium and add 1 tbsp olive oil for cooking.
- Use an ice cream scoop or a large spoon to place the fritters onto the hot pan. Use your hand or the back of the spoon to smooth out the top until they’re about 1-1.5cm thick.
- Leave them uncovered while they cook, then flip, and cook for another 4-5 minutes until they are cooked through.
- I like to prep these on their own so I can change what I’d like to serve them with depending on what time of day I’d like to have them. But regardless of what side dish I put them with I love having them with some plain greek yoghurt (instead of sour cream), and some sweet chilli sauce. It’s just the perfect combination!
