Chocolate Orange Pudding

A rich, silky chocolate orange pudding that’s low in calories and perfect for getting you through a sweet-treat craving.

Ingredients

Instructions

  1. Pour 125ml of the cold milk into a medium bowl. Sprinkle the gelatine evenly over the surface and leave it to bloom for 5 minutes.
  2. Add the remaining 250ml milk to a small saucepan with the cocoa powder, sweetener and salt. Whisk over low-to-medium heat until warm, smooth and fully combined. Do not allow it to boil.
  3. Remove the saucepan from the heat. Add the bloomed gelatine mixture and whisk until the gelatine has completely dissolved.
  4. Stir through the orange extract, orange zest and vanilla extract.
  5. Divide the mixture evenly between two small glasses, ramekins or dessert bowls.
  6. Refrigerate for at least 2 hours, or until the puddings are completely chilled and set.
  7. Top with additional orange zest and the optional dark chocolate chips before serving.

Notes

  • Add the sweetener gradually and taste the mixture before chilling. The amount needed will depend on the sweetener you use.
  • For an optional finish, add some diced orange on top
  • For the smoothest pudding, sift the cocoa powder before adding it or pour the finished mixture through a fine-mesh sieve.
  • Avoid boiling the mixture, as excessive heat can affect how well the gelatine sets.
  • The puddings can be stored covered in the fridge for up to 3 days.
  • Without the optional chocolate chips, this pudding is much lower calorie.
