Herb Salsa Barramundi with Pomegranate Walnut Salad
I’ll be honest with you, I’ve never been much of a salad girl. I’d eat them out of obligation, not joy.
But lately, I’ve been trying to sneak in more easy nutrients without turning every meal into a full-on event.
The key for me? Texture. A little crunch here, a pop of flavour there, and suddenly it’s not so boring.
This salad is one I actually look forward to.
Pomegranate arils add sweetness and crunch, walnuts bring in some healthy fats, and coriander gives it that herby, fresh finish that ties in perfectly with the barramundi.
And the fish? Couldn’t be easier.

Herb Salsa Barramundi with Pomegranate Walnut Salad

High-protein, low-fat herb salsa barramundi cooked perfectly in the air fryer and paired with a vibrant pomegranate walnut salad. Easy, fresh, and nutrient-dense, perfect for a light lunch or dinner.
Ingredients
Instructions
- Make the herb salsa: Mix the coriander, garlic, lime juice and zest, olive oil, vinegar, and salt in a small bowl.
- Marinate the fish: Rub the salsa over the barramundi fillets and let them sit for 5–10 minutes.
- Air fry the fish: Preheat the air fryer to 180°C. Place fillets in the basket and cook for 8–10 minutes or until cooked through and lightly golden.
- Assemble the salad: Chop and toss walnuts and fresh coriander, with pomegranate arils, olive oil, salt, and a drizzle of balsamic glaze.
- Serve: Plate the fish alongside the salad and enjoy immediately.
