Recipe: Low Carb Chilli Chicken Noodles

Created this recipe for some of my online coaching clients to have a dish with some —spice— to it, and have some noodles, without absolutely decimating their carb allowance for the day
I recommend using this brand of konjac noodles.


  • 400g (14oz) chicken

  • Spray olive oil

  • 2 tbsp sriracha

  • 1/6 cup gf light soy sauce

  • 1/2 a red chilli

  • 500g (18oz) frozen mixed veg (eg stir fry mix)

  • 250g (8.5oz) konjac noodles

  • 50g (1.7oz) peanuts (on top)


  1. Put pan on low heat and cook through chicken

  2. Once chicken has started cooking add in mixed vegetables, chilli, sriracha, and soy sauce.

  3. While chicken is cooking cook konjac noodles in a separate bowl (I like to do this buy pouring boiling water over them and letting them soak in it for a few minutes)

  4. Once chicken and veg are cooked through add konjac noodles and mix well.

  5. Serve and top with 25g of peanuts per person.
