Recipe: Marinated Beef & Greens (Meal Prep)
An iron-rich recipe that’s simple to meal prep.
I’m going to use brown rice as my carb here but you can use whatever you like.
Marinated Beef & Greens

Ingredients
Instructions
- In a medium bowl, mix together all of the ingredients for the marinade. Add the beef slices and stir until coated. Set aside for at least 10 minutes.
- Cook broccoli and rice.
- Or, if meal prepping use frozen broccoli and parboiled packet rice to save time and cook them fresh when serving.
- Heat cooking oil over high heat, for about 2 minutes.
- Quickly add the beef to the pan and spread the pieces out to a single layer allowing them to brown. Add the garlic, and ginger and continue cooking until the meat is no longer pink (about 1-2 minutes making sure not to overcook).
- Pour in the sauce, stirring constantly, until the sauce boils and thickens.
- Quickly stir in the broccoli and toss everything together to coat well. Salt and pepper to taste.
- Optional: sprinkle with sesame seeds and chopped spring onions.
