Recipe: Marinated Beef & Greens (Meal Prep)

An iron-rich recipe that’s simple to meal prep.

I’m going to use brown rice as my carb here but you can use whatever you like.

Ingredients

Instructions

Marinade the beef
  1. In a medium bowl, mix together all of the ingredients for the marinade. Add the beef slices and stir until coated. Set aside for at least 10 minutes.
Sides
  1. Cook broccoli and rice.
  2. Or, if meal prepping use frozen broccoli and parboiled packet rice to save time and cook them fresh when serving.
Cooking
  1. Heat cooking oil over high heat, for about 2 minutes.
  2. Quickly add the beef to the pan and spread the pieces out to a single layer allowing them to brown. Add the garlic, and ginger and continue cooking until the meat is no longer pink (about 1-2 minutes making sure not to overcook).
  3. Pour in the sauce, stirring constantly, until the sauce boils and thickens.
  4. Quickly stir in the broccoli and toss everything together to coat well. Salt and pepper to taste.
  5. Optional: sprinkle with sesame seeds and chopped spring onions.
