Sugar-Free Orange Cheesecake Bites

 

I am sharing with you a variation on one of my favourite desserts, My Sugar-Free Orange Cheesecake Bites!

This recipe is packed with flavour to fill those sweet cravings but without the heaviness that typically comes with normal cheesecakes!

Instructions

  1. Preheat oven to 150 degrees Celsius and lightly grease six cups of a muffin tin with coconut oil. Alternatively, you can use paper liners.
  2. Whisk the flour, erythritol, cinnamon, and nutmeg together in a bowl. Pour in the melted coconut oil and stir until well combined.
  3. Divide the crust mixture evenly between the six cups. Press firmly.
  4. Bake for 10 minutes or until the crusts are just golden brown. Set aside to cool.
  5. Beat the cream cheese with an electric mixer on medium speed until smooth. Add the orange zest, erythritol, egg, vanilla extract, and salt—continue to beat until smooth.
  6. Evenly divide the filling between the six cups. Gently shake the pan to even out the tops.
  7. Bake for 18-20 minutes or until the cheesecake bites jiggle a bit but are mostly set.
  8. Leave the cheesecake bites to cool at room temperature for 30-45 minutes.
  9. Cover and chill in the refrigerator for at least 4 hours. Overnight is best.
  10. Enjoy!
