Try this quick and delicious high protein prawn stir fry recipe that combines succulent prawns with a colourful medley of vegetables and fragrant jasmine rice. Packed with protein and bursting with flavour, this dish is perfect for a nutritious and satisfying meal.

Ingredients

  1. Start by heating the vegetable oil in a wok or large frying pan over medium-high heat. Heat a second pan for your veggies and egg.
  2. In a bowl or container mix together your prawns, soy sauce, sesame oil, and arrowroot powder.
  3. Add the prawns to the pan with oil and stir-fry them until they are cooked through, which should take about 2-3 minutes.
  4. In the other pan, add the chopped carrot, corn, and peas (I use a frozen, chopped mix), and stir-fry for about 2-3 minutes until they are slightly tender. Push the vegetables to one side of the pan and crack the egg into the empty space. Scramble the egg gently, allowing it to cook for a minute or until it starts to set.
  5. Next, add the cooked jasmine rice to the prawn pan and stir-fry it together, breaking up any clumps with a spatula. Add your cooked veg and egg into the mix and stir through well.
  6. Drizzle extra soy sauce and sesame oil if desired, add salt over the rice and continue to stir-fry for another 2-3 minutes until everything is well combined and heated through.
  7. Serve the prawn stir fry hot and with some spring onion on top.
