Chocolate Caramel Protein Balls with Chopped Almonds

Ingredients
Instructions
- Add the dates to a food processor. Run the processor until the dates start to break down.
- Add all but 2 tablespoons of the almonds to the food processor with maple syrup, cocoa powder, and protein powder.
- Process until the mixture starts to hold together. Slowly add the almond milk if the mixture is too dry.
- Form heaping tablespoon portions of the mixture into balls and place them onto a parchment-lined sheet.
- Toss the chocolate chips and coconut oil together in a microwave-safe bowl.
- Microwave on low in 30-second increments until melted.
- Dip the balls into the melted chocolate. Top each one with a pinch of the reserved almonds.
- Freeze for 30 minutes or refrigerate for 2 hours, so the balls firm up.
