Steak, Broccoli and Chard Quinoa Bowls

- Pour the quinoa into a small saucepan with the broth.
- Bring to a boil, reduce to a simmer, cover, and simmer for 15 minutes. The quinoa is ready when all the liquid is absorbed and the tiny seeds have popped.
- Remove the quinoa from the heat, fluff with a fork, and set aside.
- Heat a heavy, medium-sized skillet over high heat.
- Season the sliced steak with salt and black pepper, then drizzle the oil into the skillet once hot.
- When the oil is shimmering, add the steak slices to the skillet and cook for 3 minutes per side. Transfer steak to a platter to rest and set aside.
- Reduce the heat under the skillet to medium. Quickly whisk the sauce ingredients together, then pour into the skillet. Scrape the bottom of the skillet to release any fond.
- Add the broccoli and chard. Simmer for 3 minutes while tossing occasionally
- Divide quinoa between two bowls. Add the broccoli and chard, followed by the steak.
- Top with green onion and serve.
