Chicken Udon Noodle Soup

Ingredients

Instructions

  1. Combine stock, soy sauce and ginger in a saucepan.
  2. Bring to the boil over medium-high heat.
  3. Add chicken.
  4. Reduce heat to low. Simmer, covered, for 10 minutes.
  5. Remove from heat. Stand, covered, for 10 minutes or until chicken is cooked through.
  6. Transfer chicken to a plate.
  7. Return stock to medium-high heat. Bring to a simmer.
  8. Add noodles. Cook for 2 minutes or until softened.
  9. Add pak choy. Cook, stirring, until wilted.
  10. Pour into bowls, add fresh lime juice and coriander.
