PB&J Overnight Oats
Start your day off right with PB&J overnight oats! This recipe combines the classic flavors of a peanut butter and jelly (jam) sandwich with convenient overnight oats. They consist of two parts. The first is a creamy mixture of peanut butter, oats, protein powder, and almond milk. It is a high-protein base that will keep you full throughout the morning. The second is a sweet and tangy raspberry chia jelly that calls for just four simple ingredients! Chia seeds work to thicken this part of the overnight oats while also providing a healthy dose of omega-3 fatty acids and fibre.

Instructions
- Add all the overnight oats ingredients except for the oats to a bowl. Whisk until well combined, but don’t try too hard to incorporate the peanut butter.
- Add the oats and stir. Also, press them down to completely submerge in the liquid. Set aside.
- Add the sauce ingredients to a blender or food processor. Pulse until well combined. A few chunks are fine.
- Transfer to a separate bowl.
- Cover the oats and sauce. Refrigerate for 6-8 hours.
- Transfer some of the sauce to a mason jar or serving bowl. Follow with the oats and alternate until you’ve used all of each.
Notes
You can use store bought jam instead of making homemade.
