Sweet Potato Chocolate Chip Muffins

 

These sweet potato chocolate chip muffins are healthy, nourishing treats that energise instead of slow you down. They taste like a hearty bowl of sweet potato oats with a chocolatey twist and fluffy texture. The chocolate compliments the sweet potato perfectly, and the muffins' sweetness is just right.

  1. Preheat the oven to 180 degrees Celsius and line six cups of a standard muffin tin with paper liners.
  2. Whisk the sweet potato purée, maple syrup, applesauce, oil, egg, and vanilla extract together in a mixing bowl until well combined.
  3. In a separate bowl, combine the oat flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. Stir the dry ingredients into the wet ingredients until well combined.
  5. Fold in the chocolate chips.
  6. Divide the batter between the six lined muffin tin cups.
  7. Bake for 18-20 minutes or until a tester comes out clean when inserted in the centre.
  8. Enjoy.

Notes

To make sweet potato puree, lightly rub three medium-sized sweet potatoes with oil, roast at 200 degrees Celsius for 50 minutes or until fork-tender, cool, peel, and puree the flesh in a food processor until smooth. Then measure what you need and refrigerate or freeze the rest.
