Sweet Potato Chocolate Chip Muffins
These sweet potato chocolate chip muffins are healthy, nourishing treats that energise instead of slow you down. They taste like a hearty bowl of sweet potato oats with a chocolatey twist and fluffy texture. The chocolate compliments the sweet potato perfectly, and the muffins' sweetness is just right.

- Preheat the oven to 180 degrees Celsius and line six cups of a standard muffin tin with paper liners.
- Whisk the sweet potato purée, maple syrup, applesauce, oil, egg, and vanilla extract together in a mixing bowl until well combined.
- In a separate bowl, combine the oat flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Stir the dry ingredients into the wet ingredients until well combined.
- Fold in the chocolate chips.
- Divide the batter between the six lined muffin tin cups.
- Bake for 18-20 minutes or until a tester comes out clean when inserted in the centre.
- Enjoy.
Notes
To make sweet potato puree, lightly rub three medium-sized sweet potatoes with oil, roast at 200 degrees Celsius for 50 minutes or until fork-tender, cool, peel, and puree the flesh in a food processor until smooth. Then measure what you need and refrigerate or freeze the rest.
